Frenchies Caramel Twix-inspired Bars

A real treat these chocolate Twix Bars. Sugar free , low carb and the Caramel is very delicious.

Frenchies Caramel Twix-inspired Bars

Servings 13 serves

Ingredients
  

  • For the base
  • 90 ml unsweetened coconut or almond milk
  • 60 g coconut flour
  • 150 g ground almond
  • 60 g betta sweet stevia or Erythritol
  • 2 tsp vanilla
  • 1/4 tsp xantham gum
  • 1 pinch of salt
  • For the caramel
  • 40 g betta sweet stevia or Erythritol
  • 80 g butter
  • 160 g cream or unsweetened coconut or almond milk
  • 1/4 tsp Xanthan gum
  • For the topping
  • 200 g dark chocolate
  • 45 ml unsweetened coconut or almond milk

Instructions
 

  • For the base:
  • Put all ingredients in a large bowl and mix until a dough like forms.
  • Refrigerate for 15 minutes.
  • Roll the dough between two sheets of baking paper into a rectangle shape about 3cm high.
  • Bake at 175deg C for 15 minutes or until golden.
  • Cool the cake completely before topping up with the caramel sauce.
  • To make the caramel:
  • Pour the sugar into a sauce pan and cook until completely dissolved.
  • Add the butter and simmer until the mixture start to turn slight caramel color.
  • Add the cream/milk and xanthan and keep simmering until the sauce is thick and caramel in colour.
  • Cool for 5 minutes and pour over the baked base.
  • Refrigerate until the caramel is set or freeze for 2 hours.
  • Take out of the freezer and slice neatly into bars.
  • Keep in the fridge while you are making the chocolate topping
  • To make the topping:
  • Melt the chocolate in a bowl over warm water or microwave for 15 seconds at a time until the chocolate is melted.
  • Add milk of choice or cream and mix well to form a shiny ganache.
  • If the mixture too dry, add some warm milk of choice or cream.
  • To put together:
  • Put your chocolate bars on a baking rack over a large bowl.
  • Pour the chocolate over the chocolate bars or dip them one at time in the chocolate sauce and refrigerate again for 15 minutes.
  • To turn it into a decadent dessert, smother them in Frenchies Chocolate Syrup and serve with berries and cream. Bon appetit!
